Easiest Ever Train Cupcakes!

I just used a store-bought gf cupcake mix. Thankfully, they turned out fine. (Phew.)
While I waited for my cupcakes to bake and cool, I made my decorations.
Here's my secret... I used.... Fruit Roll Ups! They're so awesome because they are affordable, easy to manipulate, colorful, and gluten free! I cut them with kitchen shears into an engine shape and a train car shape. (I left the backing on them so they wouldn't stick to things.)
Once the cupcakes cooled, I iced them with my store-bought icing...
And then I unpeeled and stuck on my engines and cars. I used little edible gold balls for wheels and hardening cookie icing for for the track. (Although looking back, a thin licorice candy could have worked too. I just don't really like licorice.)
And here's what my little train cupcakes looked like! Choo-choo! (And in case you're wondering, the cupcakes stayed outside in the shade for an hour and the color didn't run.)
Happy making, friends! I hope you enjoy using fruit-roll ups as faux fondant decorations too!
